Within their first year, the young salmon are carefully transported to the pristine sea water of New Zealand’s Marlborough Sounds, where they will live for the remainder of their lives.  The Marlborough Sounds, positioned atop of New Zealand’s South Island, contain hundreds of sheltered, deep-water bays, and the swift currents of the Cook Strait filter and feed the area’s wildlife. The sites selected for the sea farms we painstakingly chosen to maintain the most natural habitat for the Ora King Salmon, helping to produce a consistent level of excellence. A Quality at the Source philosophy is the foundation for handling each Ora King Salmon. The salmon are nurtured throughout their lifecycle, minimizing stress and fatigue, and are humanely harvested using a percussive stunning method based on the traditional Japanese Iki-Jime technique. These efforts to reduce stress result in a minimal release of lactic acid which, along with rapid chilling help ensure the highest quality texture. Master Graders hand inspect and review each and every fish against standards for size, color, and quality. Once approved, each individually numbered Ora King gill tag is attached to allow for authenticity and traceability.

Ora King is the culmination of a classical breeding program that has spanned nearly two decades and is designed to yield only the highest quality king salmon with the most appealing taste, texture, and color. Nearly 7 generations into this classical breeding program, 90 distinct Ora King Salmon families are maintained so that truly the best of the best traits are carried forward to subsequent generations. With this well established program comes full traceability from the hatchery, to sea, to plate.
